About the Recipe
So, I have a soft spot for Little Debbie Oatmeal Creampies but I hate to think what chemicals are in them when I'm downing an entire box in a sitting...so I decided to just start making my own so I know what I'm consuming en mass.
Made these scrumptious things the other day and I can't go back...they are a bit richer than the store bought but if you prefer a lighter molasses flavor then I recommend subbing the dark brown sugar and turbinado for light brown sugar and regular granulated. If you are like me and LOVE strong flavors then keep as is and enjoy!

Ingredients
Soft Oatmeal Cookies (24 Individual Cookies)
1 1/2 teaspoon vanilla extract (homemade recipe)
Cream Filling for 12 Sandwiches
3/4 cup unsalted butter, softened
1 1/2 teaspoon pure vanilla extract
Preparation
Cookies:
Line cookie sheets with parchment paper.
Preheat oven to 350°F
In a midsized bowl, sift together the flour, baking soda, cinnamon, nutmeg and salt. Set aside.
In large bowl cream together butter and sugars until fluffy.
Add in eggs and vanilla and mix until combined.
Add the flour mixture to the wet ingredients, mixing until just combined.
Add in oats and mix.
Chill the dough before portioning out on the tray for baking (about 5 minutes)
Scoop about 2 tablespoons of dough per cookie and bake for 10-12 minutes. Cool Completely before filling.
Cream Filling:
In a bowl, beat butter on medium-high speed for about 5 minutes. The butter should be very pale and fluffy.
Gradually add in the powdered sugar on low speed.
Add in vanilla extract and heavy cream.
Once everything is added, beat the mixture on medium-high speed 5 minutes. *You may add additional heavy cream one tsp at a time to get to the preferred texture.*
Fill the cookies with the cream after the cookies have been fully cooled.
EAT! You may also store in the fridge for a few days in a sealed container. Best served at room temperature!
NOTES:
*Trade out light brown sugar and granulated for the dark brown and turbinado for a lighter flavor.
**add in 2/3c of sifted unsweetened cocoa powder to make them chocolate oatmeal creampies, YUM.
